FUMS, PROFUMS & SALUMS

On the last Sunday of April, Sutrio celebrates its ancient butchering traditions and the art of smoking with the festival “Fums, profums e salums.”

This flavorful itinerary winds through the village streets, offering tastings of pork dishes, cured meats, cheeses, and smoked fish, all typical delicacies of the region.
A true symphony of flavors and aromas from across the valley, reinterpreted and presented by Sutrio's restaurants and those of the surrounding area along the festival route. To complement the tastings: the finest wines of Friuli Venezia Giulia.

CJARSONS

The symbolic dish of Carnic cuisine is celebrated in Sutrio every year on the first Sunday of June: the Cjarson, a kind of stuffed raviolo. It is dressed with melted butter and smoked ricotta in its savory version, or with cinnamon or cocoa in its sweet variation.

But what exactly goes inside this dish? There is practically a recipe for every household: in fact, tradition has it that cjarsons were prepared with whatever was available in the pantry. Potatoes were always present, together with fragrant herbs such as mint, lemon balm, parsley… plus a handful of raisins and a sprinkling of spices.

The history of cjarsons is ancient and intertwined with that of these lands: the spices came from the journeys of the cramars, the traveling merchants who, with their “crame” packs, would cross into Austria and Germany to trade in spices, fabrics, and natural remedies.

At the Festa dei Cjarsons, every village presents its own variation of the recipe, offering visitors the chance to taste the many traditions that each community has preserved and passed down.

MAGIA DEL LEGNO

Sutrio is also known as “Il pais dai marangons”, the village of carpenters. On the first Sunday of September, the town turns into a vast open-air workshop where artisans showcase their skills.

It's a day that takes you back in time to discover the traditions and crafts of our grandparents: wood carving and inlay, turning, sculpture. And not only woodwork: embroidery also finds its place here, an ancient art of the hands still lovingly passed down from mother to daughter.

Since 1990, La Magia del Legno (“The Magic of Wood”) has enlivened the streets and courtyards of Sutrio. For over 30 years, the entire community and local associations have been working together to share and pass on to new generations the roots of this land, roots deeply intertwined with wood, a material found in abundance thanks to the forests surrounding the village.
